In the Kitchen with Ken: Sloppy Joes and Battered Onion Rings Sloppy Joes 2 lbs ground beef 80/20 3 tablespoons A1 Steak Sauce 2 tablespoons Worcestershire sauce 1 tablespoon ground black pepper 1 tablespoon onion powder 1 tablespoon paprika 1 tablespoon dry mustard 6 garlic cloves 1 Vidalia onion 1 green bell pepper ½ yellow bell pepper ½ red bell pepper 1 jalapeño 6 medium tomatoes 1 quart crushed tomatoes and sauce 1 can tomato paste 2 tablespoons all purpose flour Combine first seven ingredients in large skillet. Brown the meat, then strain and set aside. In the same skillet, add crushed garlic, chopped onions, bell peppers and jalapenos. Cook until onions are clear and peppers have a little char on them. While the peppers are cooking, boil the tomatoes in separate pot until the skins begins to peel off. Strain tomatoes, remove the skin, and dice them up. Add chopped tomatoes, crushed tomatoes, tomato paste and flour to skillet with the onions, peppers and meat. Mix well and cook over medium heat for 45 minutes, stirring as needed. Place on a sesame seed bun and serve hot. Battered Onion Rings 4 Vidalia onions 1 cup flour, plus extra for coating ½ tablespoon baking powder 1 tablespoon paprika 1 tablespoon onion powder ½ tablespoon garlic salt 1 ½ cups buttermilk Vegetable oil Cut onions into large slices and coat in flour. For Large batch: 4 pounds of groud pork 4 tablespoons of oyster sauce 4 tablespoons of sesame oil 6 tablespoons of light soy sauce 6 tablespoons of cornstarch 4 tablespoons of Tapioca starch 2 large onions minced 2 tablespoons of sugar 1 teaspoon of pepper 1 cup of water 4 eggs (Use half as much for a smaller batch) 1) Mix all the above ingredient together. 2) Sprinkle salt on top of ground pork and mix. 3) Mix the ingredients really good until there are no lumps. 4) When mixing in the minced onions, make sure to knead the onions into the mix, or else the onions will clump. 5) Surprisingly, this is the same mix for Won Tons (Ser Gows) and also Sui Mais. 6) Smaller dollops for Won Tons (Ser Gows which mean water dogs). 7) Larger dollops for Su Mai. 8) For Won Tons (Ser Gows), need to steam for 18 minutes. 9) For Su Mais, need to steam for 20 minutes. 10) For Won Ton soup, use 1/2 chicken broth, 1/2 water. Add vegetables, like broccoli, gai lan, bok choy, snow peas, and/or carrots. Enjoy!
Betty's Almond Apricot Brie with Gingersnaps Recipe In this video, Betty demonstrates how to make her Almond Apricot Brie with Gingersnaps. This is an elegant and festive dip that you may want to use during the holiday season. It is composed of Brie cheese, topped with apricot preserves, toasted almonds, brown sugar, and honey--then baked slowly in the oven until the cheese melts. Served with gingensnaps, it's awesome! (You can also add a little Amaretto to the apricot preserves, if you like!) Ingredients: 15 oz. round Brie cheese 2 tablespoons apricot preserves 1 tablespoon Amaretto liquer (optinal) 3 tablespoons sliced almonds, toasted 1/2 tablespoon brown sugar 1 tablespoon honey gingersnaps (You may substitute vanilla wafers, Ritz crackers, or other cookies/crackers.) Remove the rind from top of 15 oz. round of Brie cheese, cutting to within 1/2-inch of outsede edges. Place cheese on a large ovenproof plate that you can use for serving. Combine 2 tablespoons apricot preserves with 1 tablespoon Amaretto liquer (if desired). Spread mixture over the top of cheese. Sprinkle 3 tablespoons toasted, sliced almonds and 1/2 tablespoon brown sugar. Drizzle with 1 tablespoon honey. Bake at 300 degrees for approximately 12 to 15 minutes, or until cheese is beginning to melt. Serve immediately with gingersnaps. Scrumptious!

Beijing Beef Recipe like Panda Express - Chinese Food Beijing Beef Recipe like Panda Express Copycat Recipe- Chinese Food Ingredients: 3/4 lb flank steak, fat and silver-skin removed - sliced into thin strips 6 tablespoons cornstarch, for dusting Oil, for frying Marinade: 1 egg 1/4 teaspoon salt 2 tablespoons water 1 tablespoon cornstarch ---- 2 chopped cloves garlic 1 shallot sliced 6 - 8 assorted chili peppers ---- Sauce: 4 tablespoons water 2 tablespoons sugar 3 tablespoons ketchup 1 tablespoon vinegar 1 teaspoon chili sauce 1 tablespoon hoisin sauce Preparation: Cut beef into thin strips against the grain. In a bowl combine marinade and refrigerate at least 15 minutes. Heat ingredients for sauce and bring to a boil. Add 1 tablespoon corn starch then simmer. Ingredients: 1 pound lean ground beef 2 1/2 tablespoons fine, dry bread crumbs 1 egg, well beaten 1 teaspoon salt 1 cup onion, finely chopped 1 cup green pepper, finely chopped 2 tablespoons butter or margarine, melted 10 3/4 oz. can tomato soup 2 tablespoons brown sugar 1 tablespoon prepared mustard 1 tablespoon white vinegar In a large bowl, mix 1 pound ground beef, 2 1/2 tablespoons dry bread crumbs, 1 well-beaten egg, and 1 teaspoon salt. Shape into approximately 48 small meatballs. Place on a broiler pan (or a shallow baking pan), and broil at 400 degrees until well-browned, turning once. Remove from the oven, and drain off any excess fat. In a medium skillet, cook 1 cup chopped green onion and 1 cup chopped green pepper in 2 tablespoons melted butter, until tender. Stir in a 10 3/4 oz. can of tomato soup, 2 tablespoons brown sugar, 4 tablespoons Worcestershire sauce, 1 tablespoon prepared mustard, and 1 tablespoon white vinegar. 5-Minute chocolate cake in a mug this recipe has been floating around the internets for awhile, I just had it e-mailed to me. the result is a bit eggy, slightly dense, but really chocolatey and delicious. It claims to be 5 minute cake, but you'd have to really hurry to do it in 5 - took me about 8 minutes, including the 3 minutes in the microwave. Here's the recipe, copied and pasted right out of my e-mail: 5 MINUTE CHOCOLATE MUG CAKE 4 tablespoons flour 4 tablespoons sugar 2 tablespoons cocoa 1 egg 3 tablespoons milk 3 tablespoons oil 3 tablespoons chocolate chips (optional) a small splash of vanilla extract 1 large coffee mug Add dry ingredients to mug, and mix well. Add the egg and mix thoroughly. Pour in the milk and oil and mix well. Add the chocolate chips (if using) and vanilla extract, and mix again. Put your mug in the microwave and cook for 3 minutes at 1000 watts (high). The cake will rise over the top of the mug, but don't be alarmed! Allow to cool a little, and tip out onto a plate if desired.

Mongolian Beef Ingredients: Beef Marinade: 8oz Beef sliced across the grain 1 Tablespoons cooking wine (I used soju) 1 teaspoon dark soy sauce 1/2 Tablespoon corn starch Veggies Sliced onion Green onion cut into pieces 3/4 to 1 inch in length Chili peppers cut into slices 1/ 4 teaspoon chopped garlic 1/4 teaspoon grated ginger Thickening Slurry 1/2 Tablespoon corn starch 1 Tablespoon Water For Sauce: 1/4 cup chicken stock 1/2 teaspoon sesame oil 1 teaspoon dark soy sauce 1 Tablespoon oyster sauce 1 teaspoon raw sugar First marinade beef with cooking wine, dark soy sauce and corn starch. Let marinade for 15 to 30 minutes. Make slurry 1 Tablespoon water and 1/2 Tablespoon corn starch. Make sauce, add all sauce ingredients, mix and sit aside. When the pan is hot add oil then beef. Cook until meat is 75 to 80% done, remove from pan. Cook onion, green onion and chili. When they are almost dome add sauce. When sauce starts to boil return the beef to pan. Add slurry and mix until sauce is thick. Turn off heat and remove from pan. Serve with rice or noodles.

Prepare rice (see my perfect rice recipe for directions) 4. Stir fry broccoli with 1/2 tablespoon ginger and 1 tablespoon garlic 5. Stir in some teriyaki sauce and hoisin - set broccoli aside 6. Grill chicken breast until cooked. Let rest a few minutes before cooking 7. Cut chicken into strips. 8. In bowl layer rice broccoli and chicken. 9. Bring teriyaki glaze to a boil. 10. Combine corn starch and water in small container. 11. Add to glaze until it becomes thick. 12. Pour over rice broccoli and chicken and serve.
Betty's Parsley and Chive Baked Potato Recipe In this video, Betty demonstrates how to make one of her favorite accompaniments to almost any dinner, an herb-seasoned baked potato. This recipe is for a Parsley and Chive Baked Potato, although you may substitute other favorite fresh herbs. Ingredients: (for one baked potato) 1 medium to large baking potato (I used the Russet variety.) 2 tablespoons butter or margarine, softened 1 tablespoon chopped parsley 1 tablespoon chopped chives 1/4 teaspoon salt 1/4 teaspoon freshly ground black pepper Slice potato lengthwise into 4 equally-sized slices. Set aside. In a small mixing bowl, combine 2 tablespoons of softened butter, 1 tablespoon chopped parsley, 1 tablespoon chopped chives, 1/4 teaspoon salt, and 1/4 teaspoon freshly ground black pepper. Stir until smooth. Spread this mixture between the 4 potato slices and reassemble the potato, scraping any excess filling from the outside. Place on a generous square of aluminum foil and wrap the foil tightly around the potato, leaving any open edges toward the top. Place in a small baking dish and bake at 400 degrees for 1 hour to 1 hour and 15 minutes, depending on the size of the potato. You can check for doneness by squeezing the potato while in the oven, using a potholder. It should be slightly soft. Remove the potato from the oven, and place on a serving dish. Open the aluminum foil and discard it. You will have 4 lovely slices of herb-seasoned baked potato that will melt in your mouth!

In the Kitchen with Ken: Grilled Shrimp Grilled shrimp 2 pounds medium white shrimp Extra virgin olive oil Double bamboo skewers Dry rub (see recipe below) Using a pair of cooking scissors, cut from the top of the shell back to the tail to devein the shrimp. Rinse with cold water. Place shrimp in a large mixing bowl and toss with extra virgin olive oil. Add 5 tablespoons of dry rub and toss until each shrimp is coated. Soak skewers in water for 20-30 minutes to keep them from burning on the grill. Remove skewers from water and put shrimp on them. Place on grill directly over the coals and cook for 3 minutes per side. Serve hot. Dry rub 1 tablespoon dry mustard 1/2 tablespoon salt 1 tablespoon garlic powder 1/2 teaspoon red pepper 1/2 teaspoon white pepper 2 tablespoon chili powder 1 tablespoon sandia pepper 1 tablespoon black pepper 1/2 teaspoon coriander 3 tablespoons brown sugar Combine all seasonings in a large bowl and mix well. This should make a cup of dry rub that you can set aside to use later.

In a small saucepan, melt 1 tablespoon butter. Remove from heat. Add 2 tablespoons flour, 2 tablespoons brown sugar, and ½ cup orange juice. Return to heat, stirring constantly until thickened. Drain heated beets. Add sauce to beets, and stir gently to coat. Pour into a nice serving dish. These beets are an excellent accompaniment to almost any meat entree. Happy beet-eating!

Just mix a few ingredients together, and use your fingers to press the dough into a pie pan. It's very quick, and it tastes delicious every time! Ingredients: 1 cup all purpose flour 1 tablespoon confectioner's sugar ½ teaspoon salt 6 tablespoons butter (still cold from the refrigerator and cut into six 1-tablespoon pieces) 2 to 3 tablespoons ice cold water In a large mixing bowl, combine 1 cup all purpose flour, 1 tablespoon confectioner's sugar, and ½ teaspoon salt. Stir until well-blended. Add 6 tablespoons butter. Use a pastry blender to cut butter into dry ingredients, until mixture is the consistency of coarse cornmeal. Add 2 to 3 tablespoons cold water, a little at a time, and use a fork to stir the mixture until you can form it into a ball. Use your hands to stretch the ball to thin it out some, and then place it in the center of a 9-inch pie pan (plate). Use your fingers and palms of your hands to press the pie crust dough evenly across the bottom and sides of the pie pan, until any excess comes to the top rim of the pie pan. Adjust the thickness of the upper rim, and then press it with a fork, or use your fingers to flute the top edge.
