Let's look at the ingredients we'll be using: Four egg yolks + 1 egg 100 g/a half cup of grated Pecorino Romano cheese 150g/5.5 oz of diced guanciale or a good quality smoky bacon 320g/12 oz of spaghetti Two tablespoons of extra virgin olive oil Freshly ground black pepper OK. Let's see how it's done. The first thing you'll need to do is to boil your spaghetti in lightly salted water at a steady boil. Keep the salt low because both the meat and the pecorino cheese are already quite salty. The next step is to sauté the guanciale in a thin layer of olive oil. Once the guanciale is golden and crispy, take it off of the heat and leave it to cool for a few minutes. In a bowl, I've put the four egg yolks plus the whole egg. Now, whisk them together until completely mixed. Add the grated Pecorino, mix it in well, and after add the black pepper. If the sauce seems to be too dense, you can thin it by adding some of the water from the pasta a little bit at a time. Here we are. Now add the guanciale which has, by this time, cooled a little. This is a wonderful, but very Americanized spaghetti casserole; if you want something a little zestier, just add more Italian spices, some tomato sauce, and top with Parmesan cheese. Ingredients: ½ of a16-oz. package thin spaghetti 1 pound lean ground beef 1 large green bell pepper, chopped 1 large onion, chopped 10 ¾-oz. can condensed tomato soup 2 cup shredded sharp Cheddar cheese 2/3 cup water ½ of a small can of chopped ripe olives ½ teaspoon salt 1½ teaspoons dried Italian seasoning (If you want a zestier casserole, increase this to 1 tablespoon dried Italian seasoning.) 8 oz. can tomato sauce, optional (I did not use this ingredient, but it will give you a zestier flavor.) 1 cup grated Parmesan cheese, optional (I did not use this ingredient, but it will add more flavor.) cooking oil spray Cook ½ of a 16-oz. package thin spaghetti according to package directions. Spaghetti Sauce I don't know anyone who doesn't like a big bowl of spaghetti topped with a homemade spaghetti sauce. Hi, I'm Chef Jason Hill and today I'm going to share my easy recipe for spaghetti sauce. This spaghetti sauce recipe. This recipe uses ground turkey instead of beef, but vegetarians can omit the meat all together. The recipe calls for one small to medium onion, which is diced. Heat a large stock pot over high heat. Pour in 3 tablespoons extra virgin olive oil followed by the diced onion. Next, add 1 tablespoon of garlic-shallot puree, or 2 cloves of crushed garlic. Stir. Next, add 1 tablespoon of dried basil leaves. Crush with your fingers as you add the basil. Follow with 1 tablespoon of dried oregano. Stir this for about a minute until the onions soften, then add 1 pound of ground turkey (or beef). Break up the meat as you add it to the pot. Continue to cook the turkey all the way through, then add 1/3 cup of sherry wine. Cook the wine off for about 1 minute. Lately I've been using canned organic tomatoes for this recipe. I've found that they're less acidic and offer a better flavor profile. Finally, add two (28 ounce) cans of crushed tomatoes, followed by 15 ounces tomato sauce and 6 ounces of tomato paste. Add 1 dried bay leaf, 1 teaspoon salt and 1/2 teaspoon white pepper. Bring to a boil, then simmer for 1/2 hour, covered, over low heat. After 30 minutes, you'll see the sauce is cooked down.
