Betty's Baked Coconut Shrimp with Jamaican Jerk Seasoning Recipe In this video, Betty demonstrates how to make light Baked Coconut Shrimp with Jamaican Jerk Seasoning (with the "help" of her grandson, Carter). This is a great alternative to fried shrimp. The shrimp is dredged in a Jamaican jerk seasoning mix, then dipped in egg white, dredged in a mixture of coconut, panko breadcrumbs, and paprika. Finally, it is sprayed with cooking oil spray and baked in the oven to a golden brown. Ingredients: 1 pound unpeeled, raw large white shrimp 1 to 2 egg whites ¼ cup cornstarch 1 tablespoon Jamaican jerk seasoning 2/3 cup sweetened flaked coconut 2/3 cup panko breadcrumbs 1 teaspoon paprika cooking oil spray Wash and peel 1 pound of shrimp, leaving the tails on, and set aside. In a small mixing bowl, beat or whisk 1 or 2 egg whites until frothy, and set aside. In a small, shallow dish, mix together ¼ cup cornstarch and 1 tablespoon Jamaican jerk seasoning, and set aside. In another small, shallow dish, mix together 2/3 cup flaked coconut, 2/3 cup panko breadcrumbs, and 1 teaspoon paprika, and set aside. Dredge shrimp, one at a time, in cornstarch mixture. Dip in egg whites, and dredge in coconut mixture. Place the shrimp on a broiler pan that has been sprayed with cooking oil spray. When all shrimp are placed on broiler pan, spray the top of the coated shrimp with cooking oil spray. Bake in a 425 degree oven for 10 to 12 minutes. So since I got here, I started educating myself about the foods that they eat here in Louisiana because I noticed that Asian products are quite more expensive than the local products. So I decided to try this baked potato wedges because potatoes here are considered cheap, and I have an oven, so thats it. The first time I made this was a success because Nunnie liked it. Betty's Seasoned Oven-Baked Fries Recipe In this video, Betty demonstrates a tasty low-fat alternative to French fries--her Seasoned Oven-Baked Fries. Spiced with Italian spices and baked until crisp, you'll never miss the fat! Ingredients: 1 cup Italian-seasoned breadcrumbs 28 oz. package frozen steak fries 3 eggs, well beaten 2 tablespoons butter or margarine, melted cooking oil spray In a medium-sized mixing bowl, beat 3 eggs, using an electric mixer. Set aside. Place 1 cup seasoned breadcrumbs in a gallon-sized zip-lock plastic bag, and set aside. Spray a 15-inch by 10-inch baking pan with cooking oil spray. Dip steak fries, a few at a time, into beaten eggs. Place the dipped fries in the bag of breadcrumbs. Close the bag and shake until the fries are coated. Place fries in a single layer on prepared baking pan. When all fried are coated, drizzle melted butter or margarine evenly over the top. Bake at 400 degrees for 18 to 20 minutes, or until crisp and golden. Remove from pan to a nice serving plate, and serve immediately. These taste as good, or even better, than regular French fries, but have so much less fat!—plus, they are *so* easy to make!

Ingredients: 2 pounds fresh, uncooked chicken breast tenderloins (You may use half chicken breasts or nuggets.) meat tenderizer (no MSG), to taste freshly ground black pepper, to taste 14.75 oz. can condensed cream of mushroom soup 3/4 cup milk 1 tablespoon finely chopped onion 2 cups cornbread-style stuffing mix, crushed (I used plain cornbread-style; you may use plain or herb-seasoned-flavor.) 1 tablespoon chopped fresh parsley (or 1 teaspoon dried parsley) 1 1/2 tablespoons chopped fresh sage (or 1 1/2 teaspoons dried sage) 1/4 teaspoon paprika 2 tablespoons butter or margarine, melted coking oil spray Place 2 pounds washed, fresh chicken breast tenderloins in a medium-sized bowl. Sprinkle with meat tenderizer, to taste. Grind some fresh black pepper over the chicken, to taste. Use your hands to mix the chicken and seasoning, and then set aside. In a small bowl, mix 1/3 cup condensed cream of mushroom soup, 1/4 cup milk, and 1 tablespoon chopped onion. Stir well, and set aside. Although it has unique spices on it, it is very simple to make. The seasoning does not have to be exact so it is easy to modify the recipe for more or less chicken. Also, the seasonings are salty so there is no need to add salt to the meat. Most of the seasonings can be found at the Hala shops, but the Sazon can be found in most local grocery stores. It is usually located in the Hispanic Food section. Also, if you can not find the Goya brand, there is a Knott brand that is powder. I recommend using about 1 tablespoon of the knott powder brand, although it will not make the chicken as yellowish-orange it will taste the same.
