Broccoli Salad Recipe Broccoli Salad recipes are delicious and can be nutritious. A real "super food" broccoli is chock full of nutrition, antioxidants and flavor. This recipe is also an easy way to get more vegetables in your diet. I've got to admit, the dressing isn't too healthy - but it is delicious. Try no-fat mayo, light cheese and leave out the bacon for a more healthy option. You can make this salad with raw broccoli or blanch it a bit to hold the color and soften the florets. If you don't like raw broccoli blanch the broccoli for 1 minute or so. But be careful to not leave the broccoli in the water too long. This recipe pairs broccoli, bacon and a dressing to make a sweet and sour salad that's a great side dish or meal all on its own.

With a loaf of crusty French bread tomato salads are a fresh and summery meal. Tomatoes in a salad are a beautiful and yummy way to bring your garden to the table. Tomatoes contain lycopene, often connected to reduced incidence of prostate cancer. Tomatoes also contain vitamin C, potassium and folate. Betty's Elegant Restaurant Chicken Salad Sandwich Recipe In this video, Betty demonstrates how to make a Chicken Salad Sandwich that closely resembles the chicken salad served at an upscale restaurant in Lexington, KY. You can serve this as a sandwich or as a salad. (Both are demonstrated.) Ingredients: 15 oz. canned white chicken chunks (I used Valley Fresh brand, one 10 oz. can and one 5 oz. can. You may use leftover chicken, cut into chunks. ) 1/2 cup finely chopped celery 1/2 cup halved red seedless grapes (You may use green seedless grapes.) 1/4 finely chopped pecans (I used an electric kitchen chopper, but you may leave them in larger pieces, if desired.) 1/2 cup mayonnaise croissants, as many as you need (You can make this healthier with 100% whole wheat bread slices.) freshly washed and dried lettuce leaves In a medium to large mixing bowl, combine 15 oz. chunked chicken, 1/2 cup chopped celery, 1/2 cup halved grapes, 1/4 cup chopped pecans, and 1/2 cup mayonnaise. Stir until well-combined. Split a croissant in half horizontally. If desired, broil the cut sides of the croissant to keep them from absorbing the chicken salad filling. Now, place a couple of fresh lettuce leaves on the bottom half of the croissant, put a generous amount of chicken salad on top of the lettuce, and cap it off with the top half of the croissant. It's a beautiful potato salad, which Betty has refined over the years, by incorporating little bits of knowledge that only come with many years of experience. Ingredients: 3 medium to large Idaho baking potatoes 1 tablespoon salt 3 eggs, boiled and chopped finely 1/2 cup chopped celery 1/4 cup chopped green bell pepper 1/4 cup chopped red bell pepper 1/4 cup chopped onion 2 tablespoons sweet pickle relish 1 cup mayonnaise 1 teaspoon prepared yellow mustard 1 tablespoon sweet pickle juice dash of ground black pepper sprinkling of paprika for top Fill a medium to large pot about halfway full of water. Add 1 tablespoon salt, and bring the water to a rolling boil. In the meantime, peel your 3 baking potatoes, and cut them in half horizontally and then vertically, making 4 equally-sized pieces of each one. When the water is boiling, carefully place the 12 chunks of potatoes into the boiling water. When they come back up to a boil, reduce the heat, and cook at a low boil for about 20 minutes, until tender when tested with a fork. Drain the water through a colander into the sink, and place the drained potato chunks in a large mixing bowl. Let the potatoes sit for about 20 minutes, and then start assembling your potato salad while the potato chunks are still warm.
