My new Ron Popeil, SHOWTIME rotisserie roasts one of my organic chickens! 7-19-11 93.15 pounds of my Honky Tonk Manor, 100% steroid-hormone-antibiotic FREE, ALL NATURAL, 100% ORGANIC, partially pasture fed meat chickens are now in my BIG chest deep freeze while this one turns on my brand new Ronco SHOWTIME compact+ 3000 rotisserie. The whole house is now filled with a wonderful aroma and it wont be long before this delicious looking bird is on Kimmies plate as well as mine. All of my meat chickens are straight run Cornish X Rocks, matured to 3 days shy of 12 weeks. The smallest bird weighed in at 5.8 pounds fully cleaned and dressed. The largest that I weighed was a staggering 8.3 pounds. I might have had a couple that were larger, but I gave many birds to SOD, and Brad for helping me butcher and clean and my Mom & Dad respectively. I have 20 more cornish X rocks on the way for an August 3rd delivery. I love raising chickens!

Betty's Rotisserie Pork Loin with Rosemary--Made with Rick In this video, Betty and her husband, Rick demonstrate how to make Rotisserie Grilled Pork Loin with Rosemary. The pork loin is marinated in a blend of olive oil and minced fresh rosemary for about 4 hours. It is then seasoned with salt, pepper, and olive oil, and placed on an outdoor rotisserie grill and cooked until browned and tender. This is a great alternative to oven roast pork! Ingredients: 4 to 5 pounds uncooked boneless pork loin 2 tablespoons minced fresh rosemary (If you are using dried rosemary, use only 2 teaspoons.) salt, to taste freshly ground black peppercorns, to taste extra virgin olive oil for marinating and for coating before grilling Place the uncooked pork loin in a pan or dish that is approximately the same size as the pork loin. Rub 2 tablespoons freshly minced rosemary all over the pork loin. Drizzle enough extra virgin olive oil over the pork loin to make a nice coating. Turn to coat all parts. Cover with plastic wrap and refrigerate for about 4 hours, turning the pork loin every half-hour or so to keep the marinade soaking in evenly. When you are ready to grill your pork loin, season it on all sides with salt and freshly ground black peppercorns. Pour some more olive oil over the pork loin and rub it in. Place the meat on a spit, attaching it tightly. Place the spit over a hot grill, and turn on the rotisserie, so that the pork begins to rotate. It was my first time doing so and it was a lot easier than I suspected, actually. I may very well start doing that from now on as there was very little fat in the bottom of the crock after I was done cooking. While this didn't taste at all like the rotisserie chickens you can get at Sam's or Costco, it did indeed have a good flavor, a little bit spicy at times where I didn't mix the spices up good enough. Just a lil bit--nothing too crazy. --1 whole chicken, skinned (4-5 pounds) --2 tsp kosher salt (if you'd like it as salty as the ones in the store, add another 1 tsp.) --1 tsp paprika --1 tsp onion powder --1/2 tsp dried thyme --1 tsp Italian seasoning --1/2 tsp cayenne pepper --1/2 tsp black pepper --pinch of chili pepper (probably not necessary) --4 whole garlic cloves (optional) --1 yellow onion, quartered (optional) The Directions. I used a 6 quart crockpot for a 5 pound bird. It fit nicely. Skin the chicken and get rid of the neck and other stuff from the cavity. This takes a while, and is gross. Keep small children away so you don't freak out about salmonella. Betty's Rotisserie Chicken cooked by Rick & Betty In this video, Betty and Rick demonstrate how to make Rotisserie Chicken on an outdoor grill. The chicken is seasoned and placed over a heated grill, rotating until it is done. The meat is tender and juicy, and this is a great alternate to regular grilled chicken. Ingredients: one 4-pound chicken extra virgin olive oil freshly ground sea salt freshly ground black pepper Open the bagged chicken and remove the giblets from the inner cavity. The giblets are not used for this recipe. Rinse the chicken in clear water and place in a container that is large enough for you to season the chicken. Trim any excess fat from the chicken (although some fat is good for basting the chicken as it cooks). Pour olive oil over the chicken and spread it with your hands all over, including the inner cavity. Grind sea salt and black pepper over the chicken, and rub it over all parts, until the chicken is well-coated with olive oil and salt and pepper. Now, place the chicken on the spit, which fits on your grill. Place the spit on the grill, when the temperature of the grill is about 350 degrees. Turn on the switch to make the spit rotate. Close the grill and cook 1 ½ to 2 hours, or until the internal temperature is 175 degrees at the thickest part of the meat. (Note: The chicken is not cooked over direct flame; it is cookeby by indirect heat.) Remove from spit, carve as desired, and place on a nice serving platter. Serve immediately. Ingredients and procedures are as follows: Ingredients: -Young chicken fryers (3.5-4LB) 1-2 EA -Extra virgin olive oil 4 TBL -Extra virgin olive oil 5 TBL -Yellow onion (medium size) 2 EA -Green bell pepper 1 EA -Celery ribs 2 EA -Garlic cloves 5 EA -Lemon juice 1 whole lemon -Rosemary (fresh) 4 sprigs -Thyme (fresh) 4 sprigs -Thyme (dried) 1 tsp -Paprika 1 TBL -Oregano (dried) 1 tsp -Crushed red pepper flakes 1 tsp -Granulated Sugar 1.5 tsp -Lemon zest 1 whole lemon Procedures: Combine and whisk together the paprika, salt, dried thyme, dried oregano, granulated sugar, red pepper flakes, 2 sprigs of rosemary (chopped), 5 TBL olive oil, lemon juice, and lemon zest. Next coat your chicken thoroughly, inside out and under the skin, with the 4 TBL of olive oil. Now, rough chop and set aside your onions, bell peppers, garlic, and celery. At this point you are ready for the fun part, rub your chickens inside, out, and underneath the skin with the herb, oil, and lemon juice mixture. Once coated, stuff your chicken with the chopped vegetables and 1 sprig of rosemary and 2 sprigs of thyme in each chicken.
