Smoked white fish with barley risotto and chanterelles | euromaxx This recipe comes to us from Fia Gulliksson who runs a small restaurant in Central Sweden.Recipe 2 smoked whitefish Barley risotto with chanterelles: 1/2 onion 0.4 liter unhusked barley (or wheat or brown rice) 0.1 liter chanterelle mushrooms 1 teaspoon butter 0.6 liter chicken stock 0.1 liter dry white wine 100 g goat cheese (or Parmesan or other strong flavored cheese) 1 teaspoon coarse salt 1/2 teaspoon black pepper Pre-soak barley in water at least 5 hours. Dice the onions and sautée in butter. Add barley and chanterelles. Briefly sautée the whole mixture. Add chicken stock and white wine. Simmer, covered, for 20 minutes, stirring occasionally. Then add cubed cheese and a dash of milk, if desired, salt and pepper to taste. Fish sauce: 1/4 red onion 1/2 untreated lemon 200 g creme fraiche fish roe pinch of freshly ground pepper Finely dice red onion. Grate lemon peel. Add creme fraiche, fish roe and fresh pepper, and stir gently.

Let's see together what ingredients we'll need: ½ onion Just under 2 cups (350 g) of Carnaroli rice 1 cup (100 g) of grated Parmesan cheese 3 ½ tbsp (50 g) of butter Vegetal broth salt 2 tbsp of extra virgin olive oil 1 bottle of champagne Let's make together the risotto with champagne: In a saucepan melt the butter with the oil, add the onion and brown it on a very low flame. Now add the rice and let it toast for a few minutes. It's time to add the champagne, little by little... until the bottle is over and the rice is cooked. If the champagne is not enough, use the vegetable broth to finish cooking. The rice is cooked al dente, after half of the cooking time I added salt and now we can cream it with the parmesan cheese. To complete this How-To you will need: 3-4 c. chicken broth 2 tbsp. olive oil ½ medium onion, diced 2 cloves garlic, diced 1 c. Arborio rice ½ c. dry white wine 2 tbsp. butter ¼ c. Parmesan cheese A medium saucepan A heavy pot A ladle Step 1: Heat the broth Bring the chicken broth to a simmer in a medium saucepan. Step 2: Saute the onion and garlic Add the onion and garlic to the olive oil in a separate pot, and saute over medium-low heat until it is fragrant and translucent. Tip: Use a roomy, heavy pot that distributes heat evenly, such as a stock pot or Dutch oven. Step 3: Add the rice Add the rice to the onion and garlic. Lightly toast it, stirring constantly over medium heat for about three minutes. Tip: Do not brown the rice. It should become translucent around the edges but remain white in the center. Step 4: Add the wine Add the wine, and stir and cook until nearly all of it is absorbed by the rice. Let's take a look at our ingredients. • 1 stalk of celery, 1 carrot • 1 bunch of parsley • 14 oz of fresh squid • 1 cup of white wine • 12 oz of shrimp tails (these still need to be cleaned) • 11 oz of carnaroli or Arborio rice • Pepper and salt • 2 and a quarter pounds of mussels • 2 and a quarter pounds of small clams • Extra virgin olive oil • A spring onion • 2 cloves of garlic • And if you'd like, a chilli pepper Let's make our risotto Begin by cleaning your seafood. Firstly check your clams one by one and throw away any that are broken or opened so you can avoid shell pieces in your risotto. Remove the beards from the clams and then place them in a bowl, cover them with cold water and leave them to soak for an hour so they release any sand present. For the mussels, remove the beards from the shells and then scrub them with a scoring pad under running water to clean them thoroughly. Served with an Italian salad and crusty bread, this is one of the most delicious and versatile risotto recipes you'll find. To make it a pumpkin risotto, simply add 1 cup of diced butternut squash or pumpkin meat along with the mushrooms. Many ingredients can also be added about 20 minutes into cooking. For an asparagus risotto, add crisp-cooked asparagus tips; for a seafood risotto, add some of Hill's sauteed garlic shrimp and about 1 tablespoon of tomato paste to the mix. Risotto alla Milanese is a typical dish from Milan ++++ Hi everyone and welcome to the GialloZafferano kitchen. I'm Deborah and today we'll be preparing a traditional dish from Milan: Saffron Risotto. Let's take a look at what we'll need: 1 2/3 cups of Arborio rice 8.5 Tablespoons of butter An onion One glass of white wine 4 cups of broth A packet of saffron A little less than a cup of grated Grana Padano cheese Let's prepare our risotto! In a non-stick pan, melt the butter and to that add the chopped onion. Now add the rice and mix till it begins to brown. Once the rice is toasted, it's time to add the glass of white wine and continue to stir until it's completely absorbed. The wine has evaporated. Now we'll continue to cook the rice by continuously adding a ladleful of broth at a time and adding the next when the liquid has been absorbed. When the rice is just about cooked, add the saffron which you can dissolve in a little bit of warm broth. Continue to mix until everything has finished cooking. The rice is finished. Now, add the grated cheese and mix! Here's our saffron risotto. As a luxurious finishing touch, serve the risotto with a bit of saffron sprinkled over the top.
