Sugarshack has a great method for making bubble-free buttercream, I haven't tried it but I know a lot of people have success with that. The main thing is, I realized I was worrying for nothing. Yes, it is easier to smooth a cake that doesn't have bubbles, but the bubbles can be easy to smooth, as you saw in the video, start to finish went pretty quickly. Ingredients 2 cups of Flour 1 Tbsp of Baking Powder ½ tsp of Salt 1/8 tsp of Ground Cinnamon 1 12 oz Bag of Milk Chocolate Chips 2/3 of a cup of Whole Milk ½ cup of Melted Unsalted Butter 2 Tbsp of Sour Cream 2 Eggs ½ tsp of Vanilla Extract 1/3 cup of Granulated Sugar 1/3 cup of Brown Sugar Process, 1) Preheat your oven to 400 degrees. Line a 12 cup muffin tin with liners and spray the edges with non stick cooking spray, set aside. 2) In a small bowl mix together the first 4 ingredients and set aside. 3) In another small bowl add the chocolate chips and half a cup of the dry ingredients mix and toss to make sure each piece of chocolate chips are coated in the flour mixture. 4) In a large bowl mix together the remaining ingredients until combined. Add the dry ingredients and just mix to combine but not over mixing.   • Yahcna's Sweet Potato Cupcakes (Vegan) In this video, I turn the popular soul food dish sweet potatoes into a delicious contemporary treat you you can eat with your hands! INGREDIENTS 2 sweet potatoes or 15 oz. can sweet potatoes 3 cups Whole Wheat Pastry Flour (or all Purpose Flour) 1 1/4 cup Vegan Cane Sugar or dry sweetener 1 Tbsp. baking soda 2 tsps. cinnamon 1 1/2 tsps. ground ginger 3/4 tsps. nutmeg 1/2 tsp. seasalt 1 cup water 1/4 cup oil 2 tsps. vanilla 1/3 cup Vegan Butter Almond Milk 2 Tbsp. Apple Cider Vinegar ICING INGREDIENTS 2/3 cups vegan butter 4 cups confectioner's sugar 1 tsp. vanilla 1/4 cup almond milk Preheat oven to 350 and prep your cupcake liners or cake pan so that it's ready (Note: prepping is greasing and lightly flouring your cake pan, or adding cupcake liners to cupcake pans. For more on this, see my cake prepping video) 1. Peel, and boil your sweet potatoes in 4 cups of water with 1 tsp. salt until mushy soft. (If using canned sweet potatoes aka candied yams , simply go to step 2) 2. Add the vegan butter to the soft sweet potatoes (Optional: add some extra cinnamon, nutmeg, and brown sugar to taste, to this potato mixture). 3. Add all of your wet ingredients to the potato mixture. 4. Now add your dry ingredients to your mixture. 5. Blend carefully without over-mixing! (If your batter is a bit dry, add a little more milk until it's slightly thinner than pudding. 6.   • Pumpkin Pancakes An autumnal version of your favorite breakfast! Note: This is a thicker, heartier batter than regular pancakes. Dry Ingredients, whisked together: 1 cup flour 1 tbsp. baking powder 1 tbsp sugar (I use organic cane) A sprinkling of pumpkin spices like cinnamon, nutmeg, and ginger Wet Ingredients, blended together: 1 cup milk of choice 1/2 mashed pumpkin 2 tbsp. olive or coconut oil Lightly whisk the wet ingredients into the dry, only until just combined. Over mixing will mess with the lightness and fluffiness of your pancakes. A few lumps are a-ok! Spoon batter in desired sizes onto pan/griddle heated with a bit of olive oil. Since the batter is thicker, it shouldn't be pourable like regular pancake batter and it won't form the traditional bubbles. Cook for a couple minutes on each side.
