Betty's Olive-Pecan Reception Finger Sandwich Recipe In this video, Betty responds to a request for finger food for a wedding reception by demonstrating her Olive-Pecan Reception Finger Sandwiches. These sandwiches are lovely and elegant--perfect for any party or reception! Ingredients: 8 oz. cream cheese, softened to room temperature 1/2 cup mayonnaise 1/2 cup chopped pecans 1 cup chopped or sliced green salad olives, drained (Save the juice.) 2 tablespoons olive juice dash of ground black pepper whole grain slices of bread (as many as you need for your sandwiches) In a large mixing bowl, combine 8 oz. cream cheese, 1/2 cup mayonnaise, 1/2 cup chopped pecans, 1 cup chopped or sliced salad olives, 2 tablespoons olive juice, and a dash of black pepper. Combine thoroughly. Spread the olive-pecan mixture on one slice of whole grain bread and top it with another slice. Now, use a knife to trim the crusts off all four edges and cut horizontally and then vertically to form four identical pieces. Continue to form these finger sandwiches until you have used up your olive-pecan spread. Place the finger sandwiches artistically on a serving dish, and serve as finger food. Note: This spread may be used for full-sized sandwiches or as a dip with crackers. It is best if it is allowed to chill in the refrigerator overnight or longer to let the flavors mingle and for the spread to set up. These are gorgeous, tasty sandwiches for your guests!!!

Olive Butter Chef Jason Hill of shares a delicious kalamata olive butter recipe in this episode of "Chef Tips." To make this olive butter recipe, we're going to mix 2 sticks (1 pound) of softened salted butter, with 1-2 teaspoons of my garlic-shallot puree (or 1-2 cloves minced garlic), 2 tablespoons finely chopped Italian flat leaf parsley and 1/2 cup of pitted and chopped kalamata olives. The kalamata olive spread should have nice chunky bits of olives for a nice texture. Blend the mix well and roll into a log wrapped in plastic wrap. You can freeze this compound butter and slice it serve atop your favorite grilled meats or vegetables. This olive butter spread is delicious served at room temperature over toasted sourdough bread. One of these families has been unable to access their land for the last nine years due to settler attacks and pressure from Israeli soldiers. Another family tried to pick olives about ten days ago but soldiers arrived and stopped them. According to the Israeli High Court of Justice decision, Palestinian farmers have the right to access their land and soldiers must protect them. Immediately upon the families' arrival at their land, however, soldiers confronted them and argued that for the protection of them from settler violence, it was necessary for the farmers to leave.

Olive picking Part One The JAI Olive Picking Program is organized each fall in coordination with the Alternative Tourism Group (ATG). The olive picking season is short and often Palestinians are harassed or prevented from picking their olives by Israeli settlers or military forces. Chicken-Lemon-Olive-Tagine part #1 Moroccan Chicken with Lemon and Olives Recipe Ingredients 2 teaspoons paprika 1 teaspoon ground cumin 1 teaspoon ground ginger 1 teaspoon tumeric 1/2 teaspoon cinnamon 1/4 teaspoon freshly ground pepper 2 Tbsp olive oil 1 chicken, 3-4 lbs, cut into 8 pieces (or 3-4 lbs of just chicken thighs and legs, the dark meat is more flavorful) Salt 3 cloves garlic, minced 1 onion, chopped The peel from 1 preserved lemon, rinsed in cold water, pulp discarded, peel cut into thin strips 1 cup green olives, pitted 1/2 cup water 1/2 cup raisins 1/4 cup chopped fresh cilantro 1/4 cup chopped fresh flat-leaf parsley Method 1 Combine all the spices in a large bowl. Pat dry the chicken pieces and put in the bowl, coat well with the spice mixture. Let the chicken stand for one hour in the spices. 2 In a large, heavy bottomed skillet, heat the olive oil on medium high heat. Add the chicken pieces, sprinkle lightly with salt (go easy on the salt, the olives and lemons are salty), and brown, skin side down for five minutes. (If you are using a clay tagine, you will skip the browning step, heat only to medium heat and use a heat diffuser on the heating element to prevent the tagine from cracking.)
