Oatmeal Pancakes This recipe just maybe the only pancake recipe you will ever need. Add what ever you like to them while they are cooking. Grated Apple, Chocolate chips, Blueberries, chopped walnuts or pecans. Variations are limited only by your imagination. OATMEAL PANCAKES 2 cups milk 1 and 1/4 cup uncooked oatmeal 1 cup flour 2 and 1/2 tsp. baking powder 1 tsp. salt 2 TBs. sugar 3/4 - 1 cup milk 2 eggs, well beaten 1/3 cup vegetable oil 1. Combine the 1st 2 ingredients (the Oats and milk) and let stand over night in the frig. Or you can prepare the oatmeal and milk the same day you make the pancakes: Pour the milk over the oatmeal and microwave and just bring it to a boil and let cool. 2. Sift together the flour, baking powder, salt and sugar 3. Stir eggs and the 1 cup of milk into oat mixture. 4. Add the sifted dry ingredients. 5. Stir in the oil, egg, milk. 6. Allow mixture to rest for approximately a few minutes while the griddle (lightly greased) is heating up. 7. I use a half cup measure to pour batter onto the griddle. Cook till golden brown on each side.

Chocolate Chip Oatmeal cookies / Raisin Oatmeal Cookies For Popparoc46: The oatmeal cookie recipe I use 2 cups flour 1 tsp Baking Powder 1 tsp baking soda 1 tsp salt Mis above in small bowl, set aside In Larger bowl mix: 1 cup vegetable shortening 1 cup white sugar 1 cup brown sugar 1 tsp vanilla 2 eggs Mix the above with electric mixer until fluffy. Add flour mix to the shortening/sugars mix gradually, blending well To this add: 2 1/2 cups quick cooking oats Mix well. You may add in raisins, chocolate chips, nuts etc. at this point. Around 2 cups total of add-ins is about right. Form dough into 1-2 inch balls and place onto greased or parchment paper lined cookie sheet about 1" apart. Chewy Oatmeal Cookies (OhCurt Cookies) 1 cup butter, softened 1 cup white sugar 1 cup packed brown sugar 2 eggs 1 teaspoon vanilla extract 2 cups all-purpose flour 1 teaspoon baking soda 1 teaspoon salt 1 ½ teaspoons ground cinnamon 3 cups quick cooking oats raisins, chocolate chips or nuts (optional) 1. In a medium bowl, cream together white sugar, butter, and brown sugar. Beat in eggs one at a time, then stir in vanilla. 2. Combine flour, cinnamon, baking soda,oats,and salt. Stir into the creamed mixture. If you are using nuts or raisins, mix into dough, combining well. Cover, and chill dough for at least one hour. 3. Preheat the oven to 375 degrees F (190 degrees C). Raw Fruit Oatmeal Ingredients Optional: Fruit leather of your choice. 2-3 bananas 1 apple 1 pear Raisins soaked in water overnight. Splash of vanilla. Dash of sea salt. Approximate serving size 1 large bowl Machine use Vita-Mix or Food Processor. Optional: Dehydrator. Directions If making with fruit leather, start by making that. Once fruit leather is done, place in bowl or pie tin. Slice up 1-2 bananas and line the outside of the tin. Cut up apple and 1/2 pear into bite sized pieces and place into the center of the tin. Add a 2 bananas to the Vita-Mix with the other 1/2 pear, splash of raisin soak water, vanilla and sea salt. Blend until smooth. Pour into the tin over the apples and pears. If you are going to eat it as is, sprinkle some soaked raisins on top and cinnamon. Or you could put into the dehydrator at 110 degrees for 2-4 hours and then sprinkle with raisins and cinnamon. Frosted Oatmeal Bars (no bake) These taste very much like granola bars 3 cups quick cooking oats 1/2 cup brown sugar packed 1/2 cup butter or margarine 1/2 cup honey or corn syrup 1/2 cup semi sweet chocolate chips 1/4 cup peanut butter In a medium bowl, combine oats, sugar, butter and honey (or corn syrup). Microwave on high for 4 1/2 minutes or until bubbly, stopping to stir 2 times. LIGHTLY spread in an 8x8 baking dish (greased). Cool slightly. In a small bowl combine chocolate chips and peanut butter. Microwave on high for 1-1 1/2 minutes or until chips are melted. Stir and spread over the oatmeal base. Cut into squares while still warm. These would be much better if one added chopped almonds and/or raisins to the oatmeal base. I would also recommend the honey instead of the corn syrup. Easy, fast, easily transportable and its cheap, as you can see these ingredients are normal ingredients, there?s nothing special about them, oats, whey protein powder and dark cocoa, ground flax, blue berries, raisins and/or banana here and there. Very cheap, very economical and you can find all these things in a normal grocery store. And what we usually like to do is make it quick, simple, and easy. And what you see here is that we?re just using a rice cooker, what we call hot pot. It has a hot plate in the middle of it and it is connected to a cord so all we is a plug, essentially, to plug it in. I?ve turned it on, I?ve heated up a little bit. Active Time: 10 min Total Time: 30 min Serves: 4 Step 1: Making the Batter * 2 whole eggs * 2 tbsp. brown sugar (or maple syrup) * 2 tsp. vanilla * 3 tbsp. canola oil * 1 1/2 cups rolled oats * 1/3 cup raisins * 2 cups low fat buttermilk (or plain yogurt) * 3/4 cup flour * 1/2 tsp. baking soda * 2 pinches nutmeg * 1/2 tsp. baking powder * 2 pinches cinnamon * 1/2 tsp. salt Whisk together eggs, brown sugar, vanilla and oil. Add the oatmeal, raisins, and milk. Mix and set aside. In a separate bowl mix together flour, baking soda, nutmeg, baking powder, cinnamon and salt. Mix wet ingredients into the dry. Stir until the dry ingredients are just incorporated, do not over mix. Step 2: Cooking the Pancakes * 1 tbsp. oil or butter Turn heat to medium-high and lightly oil your griddle or frying pan. Ladle batter onto griddle keeping in mind that this batter is thicker than regular pancakes and will need to cook longer before flipping. The pancakes are ready to flip when the tops look less wet and shiny. Cook a couple minutes on the other side. Serve immediately with warm maple syrup.
