Recipes Using Cake Mixes: #13 Lemon Meringue Cake The title of this is a bit of a misnomer, this isn't that much like a cake, more like a lemon meringue pie with a cake-like base. This is actually quicker than a meringue pie, because you don't have to bake the crust, then add the filling then brown the meringue. It goes in the oven all at once. This home-made filling is superb, but you could use a lemon pie mix for the filling. (Both require cooking on the stove top, and the home made filling is much better in my opinion) BASE: 1 package yellow or golden cake mix 1/2 cup butter or margarine softened 1 egg FILLING: 1 1/3 cups sugar 1/2 cup cornstarch 1/4 tsp salt 1 3/4 cups water 4 eggs separated (reserve whites) 2 tbsp butter or margarine 1 tbsp grated lemon peel/zest 1/2 cup lemon juice TOPPING 1/4 tsp cream of tartar 1/2 cup sugar 4 reserved egg whites (from filling section) Preheat oven to 350 F. Grease a 13x9 inch pan. Combine first three ingredients for the base, mix well and press into bottom of pan. In heavy medium saucepan combine sugar, cornstarch, salt and water and cook over medium heat stirring constantly until mixture thickens and just starts to boil. Put the four egg yolks in a bowl and lightly blend them. Stir in 1/2 cups of the cooked cornstarch mixture into the egg yolks and blend. Pour the egg yolk mixture back into the saucepan with the remainder of the cornstarch mixture and stir over medium heat until thickened. Remove from heat. These cookies have creamy milk chocolate spread between two small, slow-baked, crisp meringue cookies. Ingredients: 4-oz. milk chocolate chips (You may use any type of chocolate.) 3 egg whites ¼ teaspoon cream of tartar 1 ¼ teaspoons vanilla extract 1/8 teaspoon (dash) salt ½ cup sugar In a large mixing bowl, place 3 egg whites, ¼ teaspoon cream of tartar, 1 ¼ teaspoons vanilla extract, and a dash of salt. Beat on high speed with an electric mixer until foamy. Gradually add sugar, continually beating until stiff peaks form and sugar is dissolved. Spoon the mixture into a zip-lock plastic bag. Snip one bottom corner of the bag to make a hole that is 1-inch across. Pipe mixture into 1 ¼-inch mounds onto a parchment paper-lined baking pan. Bake at 200 degrees (F) for 2 hours. Remove from oven and cool completely (about 30 minutes). When meringue mounds are cooled completely, place 4 ounces of milk chocolate chips in the top of a double boiler. Bring the water below to a boil and stir chocolate constantly until melted. Turn off heat. Spread a thin layer of melted milk chocolate onto half of the flat sides of the meringue mounds. Gently press flat sides of remaining half of meringue rounds onto chocolate-covered side of meringue mounds. Let stand until chocolate is set (about an hour). Nutmeg Meringues Music by Audionautix Jason Shaw This is for the single recipe 2 Egg whites 1/2 tsp vanilla 1/4 tsp ground nutmeg 1/4 tsp cream of tartar 2/3 cups white sugar chocolate for drizzling (optional) 1. Preheat oven to 300F. Line a large cookie sheet with parchment paper 2. combine egg whites, vanilla, nutmeg, cream of tartar. Beat until soft peaks form (tip curl completely over) Gradually add sugar, 1 tbsp at a time beating on high until stiff peaks form (tips stand straight) 3. Place meringue in a pastry bag with a star tip and pipe onto the cookie sheet in 1 1/2 inch cookies, one inch apart. You can also use a plastic bag with the corner cut or a spoon. I was out of pastry bags in this video and I used a plastic bag with a decorator tip on it. 4. Bake for 15 minutes. Turn off the oven. Let meringues dry in oven with the door closed for about an hour or until dry and crisp. Drizzle with chocolate if desired.
