Betty's Parmesan Chicken Macaroni Casserole Recipe In this video, Betty demonstrates how to make Parmesan Chicken Macaroni Casserole. This is a hearty, economical dish that is easy, tasty, and very popular! Ingredients: 1 cup mayonnaise 10 ¾-oz. can condensed cream of chicken soup 4-oz. can mushroom stems and pieces, drained 1 ½ cups chopped, cooked white meat chicken. (You may use leftover chicken, or remove meat from a rotisserie chicken, or use canned chunked white meat chicken. You may use dark meat also, if you like.) 2 cups grated Parmesan cheese (from a can) ¼ cup chopped green bell pepper ¼ cup chopped pimientos ¼ cup chopped onion 4 oz. uncooked elbow macaroni ½ cup finely crushed Ritz cracker crumbs cooking oil spray In a medium to large pot, cook 4 oz. elbow macaroni according to package directions. Drain, and set aside. In a large mixing bowl, combine 1 cup mayonnaise, a 10 ¾-oz. can cream of chicken soup, a 4-oz. can drained mushroom pieces, and 1 ½ cups chopped, cooked white meat chicken. Stir well. Add 2 cups grated Parmesan cheese, ¼ cup chopped green pepper, ¼ cup chopped pimientos, and ¼ cup chopped onion. Stir to combine. Pour mixture into a 13-inch by 9-inch by 2-inch baking dish that has been sprayed with cooking oil spray. Sprinkle ½ cup finely crushed Ritz cracker crumbs evenly over the top. Betty's Creamy Cooktop Macaroni and Cheese Recipe In this video, Betty shares her Creamy Cooktop Macaroni and Cheese Recipe. Stay tuned for her baked macaroni and cheese--to die for! Ingredients: 8 oz. uncooked elbow macaroni 1/2 medium to large pot water 1 tablespoon salt 3 tablespoons butter or margarine 1/3 cup flour (all-purpose or self-rising) 1/2 teaspoon salt 2 cups milk 2 cups (8 oz.) cubed Velveeta cheese Bring the water to a boil in a medium to large pot. Add 1 tablespoon salt. Then add 8 oz. uncooked macaroni. Allow this to cook until almost done--al dente. Drain with a colander in the sink, leaving the cooked macaroni in the colander, continuing to drain over the pot. Now make your cheese sauce: melt the 3 tablespoons of butter or margarine in a medium saucepan over low heat. Add the flour slowly, stirring continuously, until a "dough" called a roux is formed. Remove from heat, and add the 1/2 teaspoon salt, 2 cups milk, and 2 cups cubed Velveeta cheese. Return the saucepan to the stove and cook the cheese sauce, stirring constantly until it is smooth and all the cheese is melted and incorporated into the sauce. Go to the pot with the colander of macaroni on top. Lift the colander while you pour any drained water down the sink. Now empty the colander of macaroni into the pot and pour the cheese sauce on top of it. Lightly stir the cheese sauce and macaroni together until all macaroni it coated with sauce. Pour into an appropriate serving bowl. Call the kids--they love this type of macaroni!

How To Make Macaroni Pie(Trini Sunday Meal Component #2) Macaroni Pie 1lb package of elbow macaroni 3 eggs 2 tbs chicken bouillon, powdered 32 oz. sharp cheddar cheese 6 oz. can evaporated milk boil macaroni until al dente/par boiled. drain and let cool. next combine eggs, bouillon & evaporated milk by whisking them together. pour over the cooled macaroni and add 3/4's of the cheese and stir to combine. pour mixture into a buttered casserole/baking dish. top with the rest of the cheese and place in oven. bake at 375 degrees fahrenheit for 30-45minutes until golden and bubbly on top. Note: That depends on your oven's power, if it gets too hot, bake it at 350 degrees instead. Experiment to see what works best for your oven.

Ingredients: 8-oz. package elbow macaroni, uncooked 2 cups cottage cheese (small curd) 8-oz. carton sour cream 1 egg, well beaten ½ to ¾ teaspoon salt (I used ¾ teaspoon salt in the video, and thought it would have been better with a little less.) dash of ground black pepper 2cups shredded sharp Cheddar cheese cooking oil spray (for baking dish) paprika, optional (for topping) Cook 8-oz. macaroni, according to package instructions. (I added 1 teaspoon salt to the boiling water.) Drain macaroni when done. Betty has previously posted a creamy macaroni and cheese recipe (made with Velveeta), but this recipe has sharp cheddar cheese and has flavor and crustiness that is to die for!!! Ingredients: 8 oz. elbow macaroni water, salted with 1 tablespoon salt 3 tablespoons butter or margarine 1/4 cup flour 2 cups milk (I use skim milk.) 2 cups shredded cheddar cheese 1/2 teaspoon salt Cook the macaroni in a medium to large pot that is half-full of boiling water, salted with 1 tablespoon of salt. Place 8 oz. of macaroni in the boiling water. It will take about 8 minutes for the macaroni to cook to a consistency that is al denti (chewy, but not mushy). It will continue to cook when baked in the casserole. Meanwhile, prepare your cheddar cheese sauce. In a medium-sized sauce pan, melt 3 tablespoons butter or margarine, and add 1/4 cup flour. Mix the flour thoroughly into the melted butter or margarine. Do not combine the flour and butter over heat at this point. Add 2 cups milk, 2 cups shredded cheddar cheese, and 1/2 teaspoon salt. Mix thoroughly. Now, place the cheese sauce over low heat, and cook and stir until the mixture is smooth and cooked through. Move the cheese sauce to a "warmer-type" burner until your macaroni is done, and stir it occasionally. Music by Jason Shaw, Audionautix 1 1/2 cups uncooked elbow macaroni 6 tbsp butter 1/4 cup all purpose flour 1 1/2 tsp salt Ground black or cayenne pepper to taste 2 cups milk 8 oz of sharp cheddar cheese grated (I use two cups grated cheddar) 6 eggs separated Cook macaroni according to package directions; drain and set aside. Melt butter over medium heat in a large saucepan or dutch oven. Blend in flour, salt and pepper; stir well. Gradually add milk, stirring constantly. Continue cooking and stirring until thickened. Remove from heat and add cheese, stirring until cheese is melted. Beat egg yolk slightly and quickly stir into cheese sauce. Mix macaroni with cheese sauce. In a separate bowl, beat egg whites until stiff; fold into macaroni mixture. Transfer mixture to a large (3quart) casserole. Bake at 475F for 10 minutes. Reduce heat to 400F and bake for 25 minutes longer.
