Marinade-Lemon Herb This wonderful all purpose marinade uses lemon, garlic, and olive oil for its base. It is perfect for marinating any type of seafood, such as shrimp scampi and works great as a base for grilled Mahi Mahi or your favorite tilapia fish recipes. Use it on chicken or pork to brighten up the flavors while grilling. Just soak your meat of choice in the marinade for 30 minutes and prepare as desired. You'll find this an indispensable recipe in your kitchen. Marinade Recipe: 1/2 cup cilantro leaves, parsley or tarragon 1 lemon 1/8 cup white wine, optional 3/4 cup olive oil 1 teaspoon garlic puree or 1 clove minced garlic Roughly chop the cilantro and carefully remove the zest (outer yellow peel from the lemon). The zest adds a lot of flavor to this marinade. Next, cut the lemon in half and add lemon juice to a mixing bowl. Add the wine, chopped cilantro and lemon zest, followed by the garlic. Slowly pour the olive oil into the marinade and whisk quickly until it starts to thicken. This is called an emulsion. When the marinade has thickened, let it sit about 30 minutes and then pour it over your meat.

Betty's Herb Butter Recipe In this video, Betty demonstrates how to make a lovely and tasty Herb Butter. You can use it on fresh bread, or bread that is hot out of the oven, or on toasted bread. You can also spread it on French Bread, Italian Bread, and other specialty breads, and heat it in the oven. It is showy and delicious! Ingredients: ½ cup butter, softened to room temperature (Note: the herbs listed below are fresh herbs. You may substitute dry herbs in place of them, but use only 1/3 as much of the dried herbs.) ½ to 1 tablespoon curly parsley, minced (You may use flat Italian parsley, if you prefer.) ½ to 1 tablespoon chives, minced ¼ to ½ tablespoon fresh rosemary, minced In a small mixing bowl, mix ½ cup softened butter with the desired amount of parsley, chives, and rosemary. Mix until the herbs are evenly distributed throughout the butter. Place herb butter in a pretty serving bowl and chill. Remove your herb butter from the refrigerator and soften before serving with bread. You may spread it on a baked loaf of bread that has been cut lengthwise and place it in a 350 degree oven for 10 minutes. It will be crispy and gorgeous on top, but soft inside. You may also slice your loaf of bread and place the slices in a 350 degree oven for 10 minutes, and then spread individual pieces with herb butter, as desired. Either way, it is a real treat, and looks very nice with a special meal! I hope you enjoy it! --Betty

Macka B - Legalize The Herb Macka B - Legalize The Herb Macka B is a British-born reggae artist, performer and activist with a career spanning almost 30 years in the United Kingdom and Jamaica. He is also a practicing Rastafarian. On leaving school, Macka B became a technical apprentice for Ever Ready GB Ltd, made redundant three years later due to the factory closure. In 1980 completed an engineering inspection course. Macka B has always been interested in music. At school, he played the violin, and also joined the school choir. Whilst at school, he became more interested in Reggae music, especially DJ's, I-Roy, U-Roy, Prince Jazzbo. He started to practice at home, but never had the courage to perform to an audience. He and some friends started a sound system call "Exodus", they had good reaction wherever they played, and this encouraged him to write his own lyrics. In 1982, a trip to Jamaica inspired him greatly, improving his talent. He entered a talent competition in 1983 at the Rising Star night club, Bilston, (including Pato Banton, Ranking Ann) Macka B won, and from this, was invited on radio several times, his name became more known. Also at this time, he was in a band called Pre-wax, they did many live shows, and appeared on Channel 4's Rockers Roadshow. A record entitled Maggie's Letter was recorded with a producer called Papa P, which became a local success. How to Dry Herbs So you planted herbs this summer, tended them with care and now you are ready to harvest them for use in recipes. While fresh herbs are e delight, don't forget to dry some too. Drying herbs is a simple process and really doesn't take much time. You can air dry herbs by suspending them in bundles but I prefer to use the oven. It's almost instant gratification, leaves won't get dusty and I don't have to worry about finding a good spot for the process. to get started gather herbs in the early morning after the dew has evaporated but before the sun gets too intense. wash them and completely pat dry. Remove the leaves from the stems and spread them on a cookie sheet or a recycled aluminum tray. place the herbs in the oven heated to it's lowest temperature for several hours and check them regularly. once dried, just crush or crumble them and place in airtight jars that are labeled and dated. store your dried herbs in a cool, dark place.
