  • Betty's Deep-Fried Potato Wedges In this video, Betty demonstrates how to make Deep-Fried Potato Wedges. These are Russett potatoes that are boiled in water and chilled overnight, and then cut into wedges for deep-frying. Ingredients (makes 30 potato wedges): 5 medium-sized potatoes, unpeeled (I used Russett potatoes.) salted water for boiling potatoes peanut oil for frying potatoes sea salt, to taste In a large pot, place unpeeled potatoes in water that has been salted with 1 teaspoon of salt (or to taste). Bring to a boil and boil for about 25 minutes, or until tender, but not mushy, when tested with a fork. Drain, and cool to room temperature. Place in the refrigerator and chill overnight. To prepare the potatoes, cut each one in half lengthwise. Putting the flat side against the cutting board, slice each potato-half into three equal wedges, for a total of thirty wedges. Heat peanut oil to 350 degrees (F). Carefully place potato wedges into hot oil, in batches. The potato wedges will become brown and crisp very quickly, and they are already cooked in the center. Remove the browned potato wedges to a platter that is covered with paper toweling to drain. When drained, place the Deep-Fried Potato Wedges on a nice serving plate and serve immediately with ketchup. These are great with hamburgers, hot dogs, steaks, really just about anything! A popular entrée in Kentucky, as well as the entire South, this version has a seasoned cornmeal coating and is fried in peanut oil on top of the stove. It is the best!!! Ingredients: 6 (4 to 6 oz.) catfish fillets 1 cup milk 1 cup plain yellow cornmeal ½ tablespoon seasoned salt 1 teaspoon ground black pepper ¼ teaspoon onion powder ¼ teaspoon garlic powder 1 teaspoon salt vegetable oil for frying ( I used peanut oil.) Place catfish fillets in a shallow dish. Pour 1 cup milk over fish. Cover and chill 1 hour. Combine 1 cup cornmeal, ½ tablespoon seasoned salt, 1 teaspoon black pepper, ¼ teaspoon onion powder, and ¼ teaspoon garlic powder in another shallow dish. Let fish fillets stand at room temperature 10 minutes. Drain the milk from the fish fillets using a colander, discarding the milk. Sprinkle fish with 1 teaspoon salt. Dredge fish in cornmeal mixture, shaking off excess. Pour oil to depth of 1 to 1 ½ inches into a large skillet. Heat to 350 degrees. Fry fish, in batches, 3 to 4 minutes on each side, or until golden brown. Drain on wire racks over paper towels. I served my catfish fillets with French fries, Company Coleslaw, and iced tea. Other sides that you may like with catfish are Onion and Cheddar Cheese Cornbread Sticks or Doggone Good Hush Puppies and Tart and Tangy Tartar Sauce or Surfin' Seafood ***tail Sauce, all of which you can find in bettyskitchen. There's nothing like the taste of Fried Green Tomatoes! Ingredients: 4 medium-sized green tomatoes, washed and sliced into ½-inch slices ¾ cup buttermilk ½ cup cornmeal mix ½ cup flour ½ tablespoon garlic powder ground red pepper, to taste (I used 1/8 teaspoon.) salt, to taste (I used freshly ground sea salt.) black pepper, to taste (I used freshly ground black pepper.) 4 tablespoon cooking oil (I used peanut oil.) hot cayenne pepper sauce (for serving) In a gallon-sized zip-lock bag, place ½ cup cornmeal mix, ½ cup flour, ½ tablespoon garlic powder, and 1/8 teaspoon ground red pepper. Close the bag and shake it, distributing the ingredients, and then set it aside. Pour ¾ cup buttermilk into a small bowl. Season with salt and pepper, to taste, and then set aside. Place an iron (or other) skillet over medium heat, and add 4 tablespoons of cooking oil. When the oil is hot (not smoking), quickly prepare your green tomato slices for frying. For each slice, dip it first into the seasoned buttermilk, then into the spiced cornmeal mixture, coating generously, and then place it into the hot oil in the skillet. These are coated with a light tempura batter and deep fried to a golden brown. They are scrumptious with Betty's Dill Pickle Remoulade Sauce. Ingredients: 24-oz. jar kosher dill pickle slices (or large dill pickles, which you may slice to your desired thickness) 1/2 cup all-purpose flour 1/2 teaspoon garlic powder 1/4 teaspoon ground red pepper dash of salt 1/2 cup club soda, chilled peanut oil for deep-frying Dill Pickle Remoulade Sauce Drain dill pickles, reserving 1 tablespoon of pickle juice. (If pickles are whole, cut them into slices that are about 3/8-inch thick.) Use paper toweling to remove any excess moisture from the pickle slices. Place 1 ½ to 2 inches of peanut oil in a heavy, medium-sized pot. Heat oil to 370 degrees. Meanwhile, combine 1/2 cup flour, 1/2 teaspoon garlic powder, 1/4 teaspoon ground red pepper, and a dash of salt in a medium-sized mixing bowl. Stir in 1/2 cup chilled club soda and the reserved tablespoon of pickle juice, stirring just until combined. (Mixture will be lumpy, but do not over-blend.) When oil is heated, dip pickle slices, a few at a time, into batter, and shake off any excess batter. Carefully place battered pickle slices into hot oil. Fry in batches, 2 or 2 ½ minutes, until golden brown. Drain on a wire rack over paper toweling. Serve immediately with Dill Pickle Remoulade Sauce.
