What's For Dinner? Garlic Shrimp Alfredo Greetings! Today it was cold, I got home late and all I wanted was a cozy, comforting dinner, but I was also tired. What to do? Pasta, my go to comfort meal. Tonight, we have Garlic Shrimp Alfredo. This is by far one of the most quick dishes I have to put together and you could even serve this to your boss (do people still invite their boss to dinner?) Anyway, feel free to switch out the shrimp for chicken either freshly sautéed or even a can of the chunk type in a pinch. This could really be a pantry meal if you used your non fat dry milk powder and only used ¼ of the water to mix it up with some dried butter powder and you would have an awesome substitute for the heavy cream. So here is what you will need to make this dish: 1 stick of butter 2 cups heavy cream or half and half 1 8 ounce container of parmesan cheese or 2 cups worth 2 cloves of chopped garlic or 1 tablespoon of prepared garlic Black Pepper to taste ¼ teaspoon ground nutmeg 1 pound of cooked peeled shrimp 1 pound of cooked fettucine Melt butter in heavy bottomed pan, add cream and whisk in cheese. Stir until cheese is melted. Add in black pepper and nutmeg. When Pasta is done, add directly from cooking water to the sauce in the pan (this will help to thin out the Alfredo as well as give the sauce a bit more body by using the starchy pasta water). Turn the pasta in the sauce until well coated. Add your shrimp or chicken even some broccoli or mixed veggies if you like. Again, turn until everything is well ...

And the romesco sauce from Monday's dinner has come back around! Watch the full "Weekly Menu" Playlist here: Linguine with Shrimp, Spinach and Romesco Serves 4 Ingredients: 3 tbsp extra virgin olive oil ½ yellow onion, diced 1 lb. medium raw shrimp, de-veined and peeled 12 oz spinach 1 lemon, juiced ½ cup romesco sauce Salt, to taste Black pepper, to taste 1 lb. linguine Parsley, chopped for garnish Directions: Bring a large pot of salty water to a boil. Cook the pasta until al dente, about 11 minutes. Strain, reserving ¼ cup of the cooking water. In a large deep saute pan over medium high heat, add the olive oil and onion. Cook until the onion starts to soften and turn golden, about 10 minutes. Add the shrimp and season with salt and pepper. Cook the shrimp until they just turn pink, about 2 minutes. Add the romesco and stir to coat the shrimp. Then add the spinach, lemon juice, linguine and pasta water. Cook just until the water is absorbed and the spinach has wilted, about 2 minutes. What's for Dinner?: How to Make Corn Tortillas Hola! Lets make some corn tortillas! You will never believe how easy these are to make, all you need is the right ingredients and you are half way there! I use a tortilladora or tortilla press to form my tortillas, but you dont need one, all you need is a ziplock bag that you have slashed up the sides and removed the zip strip from so that you have a nice folded piece of plastic. You can do this and is it ever cheap! Here is what you need to make your own tortillas 4 cups of Maseca (corn masa) 3 cups water more or less as needed 1 teaspoon salt Place maseca in a large bowl. Add 2 cups of water and mix by hand until absorbed. At this point you will need to either leave the dough or add more water. I used about 3 cups of water to achieve the texture of play dough, it may take more or less for you depending on the weather, and the atmosphere in your cooking area. When the dough starts to come together in the bowl place it on board and knead for a few minutes until it is supple and pliable. Place dough ball in bowl and cover with either plastic wrap or a dampened dish towel and allow to rest for 30 minutes. After resting is complete, divide dough into small balls about 2 tablespoons each, I used a cookie scoop to portion this. Roll dough into small balls and place inside plastic bag on the press, and flatten slightly and press. Voila tortilla. Gently remove from the plastic and place on a hot griddle. What's for Dinner Sunday Edition: Slow Cooker Pot Roast Greetings! Today I want to share with you how I make my pot roast. I know that there are as many recipes for pot roast as there are cooks, but this is how I like to do it and it is quick (and slow) and easy! You could do this in a low oven for a little less time over the course of an afternoon, but it will be a bit drier. Here is what you need to make this recipe: 1 bottom round or rump roast 2 to 4 pounds 2 cups fresh carrots (I used the baby carrots) 1 medium onion sliced 4 cloves of garlic smashed 2 envelopes of onion soup mix (1 box) 1 can of diced tomatoes (14 ounce) 2 beef bullion cubes 1 teaspoon of marjoram 2 bay leaves 1 sprig of fresh rosemary or 1 teaspoon of dried 1 teaspoon of cracked black pepper 4 cups of water Place carrots in bottom of your crock pot and put the roast fat side down on top. Add in the onions, tomatoes, soup mix, bullion cubes and spices as well as the water. Place crock in the heating sleeve and set on high put your lid on and go do something for 3 to 4 hours. When you can smell the roast check on it. Flip it over and put the lid back on and turn the temperature to low. Remember, not to take the lid off too many times, because it takes a long time for the crock pot to heat back up again. Now wait another 2 to 3 hours until the meat can easily be torn with a fork. Serve with potatoes of your choice and maybe a nice salad and some bread. You may choose to thicken the broth for a gravy or just serve it as we did au jus. I hope you try this ...
Noreen's Kitchen: What's for Dinner? Stuffed Italian Shells Greetings! Tonight I am making some stuffed Italian shells. I was recently asked if I had a good recipe for these by a subscriber. This is similar to how my mom made them but I have added the spinach and the Portabello mushrooms. My mushrooms were some that I had dehydrated this past summer. I got them for 50 cents a package on the vegetable clearance rack and that was a deal that was too good to pass up. I have lots of dehydrated mushrooms so I may as well use them. I re-hyrated them in about 2 cups of boiling water and then squeezed them dry and chopped them, I also thawed a frozen box of chopped spinach and then squeezed it dry though a colander and some paper towels. This dish may take a little bit of preparation and effort, but in the end, you will have a lovely meal you made yourself and you won't have to buy the frozen stuffed shells. You never know what they put in that stuff anyway. Eat these by themselves or along with some sausage or meatballs and a salad and some bread and you have a great home cooked meal. This recipe actually makes enough to fill two of the foil pans that I used. I put the extra shells in a pan, stuffing side up without any sauce and placed them in the freezer until they were solid. The next day I took them out of the pan and placed them in a zip top freezer bag for easier storage. The next time I need a quick meal on a busy night, all I have to do is place those frozen shells in a pan with some sauce and some cheese and toss a salad and ...
What's for Dinner? Corned Beef & Cabbage Greetings! It has been 2 weeks since I showed you how to start your brine and prepare your brisket for your own homemade corned beef. Today I will show you how to cook and serve this wonderful dish. Here is what you will need to complete this recipe: 1 corned beef brisket 1 bunch of celery chunked 2 cups carrots chunked 2 onions quartered 2-3 cups water 1 head of cabbage (for 4 servings) quartered 6 red potatoes quartered I cooked my brisket in my Nesco roaster oven (my preferred method), but you could easily cook this in a larger crock pot or in a roasting pan covered with aluminum foil. Place the celery, carrots and onion in the bottom of the pan. Place the brisket atop the vegetables. Pour in the water and set to cook at 300 degrees for 4 to 5 hours or until the meat is tender, but not disintegrated. After all, you do want to slice it and not have to eat it like mush right? When the meat is cooked, remove from slow cooker to another dish and allow to rest, covered for about 30 minutes. In the mean time place the cabbage and potatoes back in the roaster oven or roasting pan. I turned mine up to 400 degrees and let the cabbage and potatoes cook for about a half hour while I was in the shower. Slice your brisket on the bias so that you will have nice tender slices of meat. The fat cap can easily be removed and actually comes off with little effort. Serve with the veggies and enjoy a real St. Patrick's Day meal any time the craving strikes.
