Betty's Springtime Glazed Strawberry Pie with Special Crust Recipe In this video, Betty demonstrates how to make her delicious Springtime Glazed Strawberry Pie with Special Crust recipe. It is a gorgeous-looking pie, and it tastes even better than it looks! Ingredients: Pie Crust: 1 cup flour (either self-rising or all-purpose) 1/4 cup confectioner's sugar 1 stick butter or margarine, softened to room temperature In a medium to large mixing bowl, stir together 1 cup flour and 1/4 cup confectioner's sugar. Add 1 stick softened butter, and mash with a fork until the butter is broken apart. Continue to mash the butter into the flour mixture until it forms a ball. (This may take a couple of minutes, but it will eventually make a ball.) Place the ball of dough in the center of a 9-inch pie plate, and use your fingers to press the dough to cover the bottom and sides of the pie plate. Let the dough come a little above the top of the sides, in order to make a fluted edge. Make sure the crust is coating the bottom and side of the pan evenly. Bake the crust in a 350 degree oven for about 10 to 12 minutes, or until golden. Watch carefully, to that the pie crust does not burn in any spot. Remove the crust from the oven and cool to room temperature. (You may speed this up by placing it in the refrigerator after cooling it a bit initially.) When the crust is cool, you may assemble your pie. Light Crust Doughboys : Tiger Rag (1936 ) The years between 1935 and World War IIqv were the most successful in the long history of the Doughboys. By 1937 some of the best musicians in the history of western swing had joined the band. Kenneth Pitts and Clifford Gross played fiddles. The rhythm section consisted of Dick Reinhart, guitar; Marvin (Smokey) Montgomery,qv tenor banjo; Ramon DeArman, bass; and John (Knocky) Parker, piano. Muryel Campbell played lead guitar. At various times Cecil Brower played fiddle. Almost from the beginning, the Light Crust Doughboys enjoyed a successful recording career; their records outsold those of all other fiddle bands in the Fort WorthDallas area. Their popularity on radio had much to do with their success in recording. By the 1940s the Light Crust Doughboys broadcast over 170 radio stations in the South and Southwest. There is no way of knowing how many millions of people heard their broadcasts. Though the Doughboys played good, danceable jazz,the band was basically a show band whose purpose was to entertain. Their shows took the listeners' minds off the economic problems of the thirties and added joy to their lives.

Betty's Breakfast Pizza with Hash Brown Crust Recipe In this video, Betty makes a complete breakfast in one dish--her Breakfast Pizza with Hash Brown Crust. It is very tasty and pays some attention to the amount of fat--You won't get that attention at a restaurant! Ingredients: 1/2 of a 32 oz. bag of frozen hash brown potatoes, thawed cooking oil spray 6 eggs 1 1/2 tablespoons butter or margarine salt and pepper to taste 3/4 cup to 1 cup shredded sharp Cheddar cheese 4 to 6 slices of crisp bacon, torn into bite-size pieces Spray a Pyrex pizza dish with cooking oil spray. If you don't have this type of dish, use any appropriate oven-proof dish or baking pan. Place one layer of thawed hash brown potatoes in a circle on your dish or pan. Spray the top with cooking oil spray. Place in a 400 degree oven for 20 minutes, or until soft, and then turn oven to broil and broil for 3 to 5 minutes. (You may cook the hash browns on the cooktop, by placing then in a deep skillet, adding 3 tablespoons cooking oil, and cooking for 4 to 7 minutes. This is much faster and gives a browner, crispier look to the hash browns, but it does introduce some extra fat.) Now that the hash brown crust is ready, make your scrambled eggs. Break 6 eggs into a bowl, season to taste with salt and pepper, stir them around a bit, and pour them into a hot skillet that has 1 1/2 tablespoons of melted butter or margarine. Betty's Fried Chicken with Crust In this video, Betty demonstrates how to make Fried Chicken with Crust. I usually make a very light crust for fried chicken, so that it does not soak up a lot of fat. In this case, I decided to imitate the fried chicken that you may have seen on our recent field trip to the 21st Annual Chicken Festival that we attended in London, Kentucky. At that festival, I ate fried chicken that was fried in the "World's Largest Skillet," and I am reproducing that type of chicken here. (Note: I used boneless, skinless chicken breast, whereas the chicken at the festival still had the fatty skin and some bone in it.) Ingredients: 4 uncooked boneless, skinless chicken breast halves (I trimmed mine to make them equal in size, but normally you will have different sizes.) salt, to taste ground black pepper, to taste 1 egg, well beaten ½ cup milk 1 cup all-purpose flour (Self-rising flour is okay, too.) ½ teaspoon garlic powder ½ teaspoon paprika peanut oil for frying Trim any excess fat from 4 boneless, skinless chicken breast halves. Sprinkle chicken with salt and pepper, to taste, and place in a shallow bowl. In another bowl, whisk together 1 well-beaten egg and ½ cup milk. Pour over chicken, turning pieces to coat. Let stand 5 to 10 minutes. Combine 1 cup flour, ½ teaspoon garlic powder, and ½ teaspoon paprika in a heavy duty zip-lock bag. First, let the refrigerated pie crust soften on the counter for 15 minutes, so that its easy to work with. Then roll it out onto the countertop. It shouldnt be sticky, so no flour is needed. 2. Using a ruler, mark off the crust every ½ inch to ¾ of an inch. 3. Using the ruler marks as a guide, cut the pie crust into strips with a pairing knife. 4.Starting from the outside of the sliced pie crust, pick up one strip (the shortest one) and lay it down across one edge of the pie. Selecting every other strip, place them across the pie in one direction with a 1/2 space between each strip. 5. Now for the weaving part: The next set of strips will be facing perpendicular to the first set. Again start at the edge, and as you lay it across the pie, lift every other strip from the first set so the new strip goes over and under every other one. Continue this over and under pattern as you lay down the remaining strips across the pie. 6. Finish off the crust by rolling the edge under. This is a step-by-step tutorial from the mixing of the dough to the fluting of the top edge. If you are having trouble making pie crusts, or if you just need a new recipe, try this--It's wonderful! Ingredients: 1 1/2 cups self-rising flour 1/2 cup butter (1 stick) 4 to 5 tablespoons ice-cold water In a large bowl, place 1 1/2 cups self-rising flour. Cut in 1/2 cup butter with a pastry blender. Keep working the mixture, until it is the consistency of cornmeal. Sprinkle 4 to 5 tablespoons of ice-cold water over the mixture,a little at a time, stirring after each addition. When the dough will form into a ball, stop adding water. Flatten the ball of dough on a lightly floured surface, br pressing with your hands. Roll from the center to the edge, until the dough will fit your pie plate (about 1/8-inch thick). Carefully transfer rolled dough from flat surface to your pie plate, keeping it centereed. Now, use kitchen scissors or shears to cut off excess dough from the top edge. Turn top edge under--one turn all the way around. Now flute the edge by repeatedly placing your index finger of one hand on the edge of the dough, and using your thumb and index finger of the other hand to crimp the dough.
