Peanut Brittle - Make the original Buttery thin & nutty Peanut Brittle - The original Old Fashioned recipe 2 cups sugar 1 cup light corn syrup 1/4 cup water 2 cups salted peanuts 3 TBs. butter 1 tsp. vanilla 2 tsp. baking SODA Butter lightly 2 cookie sheets 1. Combine sugar, corn syrup and water in a 3 qt heavy bottomed sauce pan 2. Stir occasionally until this mixture comes to a boil. 3. Continue cooking stirring frequently until mixture reaches 285 degrees F. 4. Turn off flame and add the butter and the butter. 5. Begin cooking again until the mixture reaches 295 degrees F 6. Remove From heat and add the vanilla and the baking soda. 7. Allow the ;mixture to foam up well. 8. Pour the mixture out thinly over 1 of the cookie sheets and spread the mixture as much as possible. The next step is really only optional, I just think the brittle looks nicer after step 9. 9. Let the candy settle on the sheet for about 45 seconds and the turn the candy upside down onto the other cookie sheet and using the tip of a dull knife just begin the process of allowing the brittle to fall onto the empty sheet. . 10. Allow to cool completely and break up and store in an air tight container.

There are certain instances where the microwave is the right tool for the job, and this candy recipe is one of them. Just keep these tips in mind: -Use a microwave safe bowl or measuring cup at least 4 cups in size. 6 cups would be ideal. - 14 minutes is a guideline only, your microwave may be faster or slower. Ingredients: 2 cups peanuts • 1 1/2 cup sugar • 1/2 cup corn syrup • 1/2 cup water • 1 tsp butter • 1 tsp baking soda Method: In a large glass bowl or glass measuring cup mix peanuts, sugar, corn syrup and water. • Microwave on high for 14 minutes. This time may vary depending on the strength of your microwave. • Remove from the microwave stir in the butter, then stir in the baking soda. The mixture will bubble. • Pour onto a greased cookie sheet and allow to cool for a few hours. • Caution this recipe is really hot coming out of the microwave; no licking the spatula or bowl. • Once the mixture has hardened break into smaller pieces. You can try and keep this for a week or more in a sealed container... But it won't stay around for more than a day or two.

Almond brittle - Italian recipe The brittle is a typical Christmas dessert, tasty and easy to make, but its origins are disputed: it's prepared in many regions of Southern Italy and each of them boasts a different tradition. As for the white nougat, there are several hypothesis about its origin. A Spanish document dating back to 1475 cites this dessert, and this may suggest an Iberian origin, but someone else claims that the brittle was born in South Italy around the 13th century, coming from a typical Arabian dessert made of almonds, honey, sugar and spices. The brittle is the protagonist of festivals taking place in many Italian villages, where great artisans battle it out to make beautiful sculptures in a competition of skill and creativity, such as in Sestola (Modena) or San Marco dei Cavoti (Benevento). Blanch the almonds by putting them in the boiling water for a couple of minutes (1), peel (2) and dab them with kitchen paper, then spread them on a baking sheet (3) and bake at 350°F (180°C) for just 5 minutes, so that they toast lightly, without browning. In the meanwhile pour the sugar (4) with the water (5) and the lemon juice into a large pan, and let it melt on a low flame, stirring occasionally with a wooden spoon (6). Let the sugar dissolve completely until golden coloured (7-8): take care not to brown it. In the meanwhile chop roughly half of the almonds, and leave the other half whole (9). Betty's Party Peanut Brittle In this video, Betty demonstrates how to make Party Peanut Brittle. Everyone loves peanut brittle, and it is a perfect pick-up food at a party. Ingredients: 1 cup sugar 1/2 cup light corn syrup pinch of salt 1 cup dry-roasted peanuts 2 tablespoons butter 1 teaspoon baking soda 2 teaspoons vanilla extract cooking oil spray In a medium-sized heavy pot, stir together 1 cup sugar, ½ cup light corn syrup, and a pinch of salt. Cook over medium heat, stirring constantly, until mixture comes to a boil. Boil, without stirring, 5 minutes (310 degrees on a candy thermometer). Add 1 cup dry-roasted peanuts. Stir. Cook 2 or 3 more minutes (280 degrees on a candy thermometer). Mixture will be golden brown. Remove from heat and stir in 2 tablespoons butter, 1 teaspoon baking soda, and 2 teaspoons vanilla extract. Immediately, pour mixture into a 15-inch by 10-inch jellyroll pan that has been sprayed with cooking oil spray. Spread mixture with the back of a wooden spoon until of desired thickness and even. Let cool 5 minutes or until hardened. Break into pieces, using a large spoon. Place on serving dish, or store in an airtight container. The taste of this Party Peanut Brittle is outrageously good! How To Make Classic Peanut Brittle Get the complete recipe: To make peanut brittle, first grease a baking sheet or pan with cooking spray or butter and set the pan aside. Combine sugar, light corn syrup, and salt in a medium-size heavy saucepan, and cook over medium heat, stirring constantly, until the mixture starts to boil. Use a brush dipped in warm water to wash down any crystals that may have formed on the sides of the pan. Boil, without stirring, for 5 minutes or until a candy thermometer reaches 310 degrees. (Note to editors: Do not show a temperature on the thermometer.) The mixture should be a golden color at this point. (Note to editors: do not include the part where we dip the metal spoon into the mixture.) Add dry-roasted or shelled raw peanuts and cook 1 to 2 minutes, stirring until all of the peanuts are coated. (The mixture should now be golden brown.) Remove from the heat, and stir in softened butter, baking soda, and vanilla. Don't over-stir this mixture. Once you stir in the baking soda, it will foam up. Immediately pour it in a thin layer onto the greased baking sheet and spreading the mixture with a spatula or wooden spoon. You need to pour and spread it while it's still foamy because that's what gives the brittle its airy texture. Try to distribute the nuts as evenly as you can. . Betty's Sweet and Crunchy Sesame Seed Brittle Recipe In this video, Betty demonstrates how to make Sweet and Crunchy Sesame Seed Brittle. This is hard candy, packed with sesame seeds. We bought the sesame seeds on our recent field trip to Happy Meadow Natural Foods in Berea, Kentucky. I only made a half-recipe of the Sesame Seed Brittle in this video, but I am giving the full recipe below: Ingredients (for the full recipe): 1 ¼ cups sesame seeds 2 cups sugar 2 tablespoons water 1 teaspoon vanilla extract Note: You will need a large skillet for this recipe. If you are using a cast iron or stainless steel skillet, you can use a metal spoon. If you are using a nonstick skillet, you may use a wooden spoon. Be sure your cooking utensils can withstand high heat. Cook 1 ¼ cups sesame seeds in your skillet over medium heat, stirring often for about 8 to 10 minutes, or until the seeds are golden brown. Remove the seeds from the skillet and place them on a plate while you prepare your candy mixture. Cook 2 cups sugar and 2 tablespoons water in the just-emptied skillet over low heat, stirring constantly, about 10 minutes, or until sugar is melted. Quickly stir in toasted sesame seeds and 1 teaspoon vanilla. Pour onto a well-greased metal pan or baking sheet. Quickly spread to desired thickness (about 1/8 to 1/4 inch), using a metal spatula. Cool completely--about 20 minutes. Break into pieces and store in an airtight container. Enjoy! --Betty :)
